Founded at Exit 13 of the New Jersey Turnpike, the NJGE exists to give the humble cured meat the deep, liquid, regulated capital market it has always deserved.

Our Charter

A market as old as the deli counter.

For generations, price discovery for premium salumi happened one paper ticket at a time, behind a glass case, negotiated in pointed silence. The New Jersey Gabagool Exchange imagines a better world: continuous two-sided markets, transparent quotes, and fractional ownership of a whole pig — all cleared and settled by dinnertime.

Our mission is to be the definitive marketplace for cured-meat securities and, when the fiat dollar inevitably thins out like cheap prosciutto, the settlement layer for the hard-asset economy that follows. We measure success in three things: liquidity, legacy, and gabagool.

The NJGE holds itself out as a Self-Regulatory Organization under the Salumi Exchange Commission. Its framework governs listing standards, market integrity, and the sacred separation of gabagool from mere cold cuts.

Clearing and settlement run through the Depository Trust & Gabagool Corporation (DTGC). Monetary policy is set by the Federal Reserve of Cured Meats, whose dual mandate is maximum freshness and stable prices.
